Mini sacher with cherry tomato jam

Sacher is a well known dessert all around the world. This version has a delicious cherry tomato jam instead of apricot jam.

Ingredients

  • For the base
  • 150 g dark chocolate
  • 130 g butter
  • 130 g flour
  • 180 g sugar
  • 120 g yolks
  • 180 g egg whites
  • 1 vanilla bean
  • 40 g powdered sugar
  • 1 pinch of salt
  • For the filling
  • 400 g Cherry Tomatoes Mutti
  • 80 g sugar
  • orange zest
  • lemon zest
  • 1 spoon brandy
  • 1 vanilla bean
  • 200 g dark chocolate
  • currant

    Dissolve the dark chocolate in a bain-marie.

    Whip the soft butter with the powdered sugar, a pinch of salt and the vanilla bean untill creamy.

    Add the yolks one by one and then add the chocolate coninuing mixing.

    Put to rest the dough for 30 minutes in the fridge.

    In a second bowl whip the egg whites and add little by little the sugar.

    Add the egg whites in the first mixture without defleating the whites.

    Add the sifted flour a little ad a time.

    Cook in a pre heated oven at 170° C for 40 minutes.

    Prepare the cherry tomato jam by boilng them in a saucepan with lemon and orange zest, 1 vanilla bean, a spoon of bourbon and 80 grams of sugar. Boil for 20 minutes.

    Blend for 30 seconds and cool it down.

    With a small pastry ring cut the base of the mini sacher.

    Cut in half the cylinders and spread a spoon of cherry tomato jam.

    Assemble the mini sacher and pour the melted chocolate on top of each mini sacher. Guarnish with hawthorn.

The origin of Sacher Torte

Sacher Torte is a famous classic Viennese cake, probably one of the most famous chocolate cake of all-time. It consists of chocolate sponge cake cut into three layers, between which apricot jam are thickly spread between the layers and on the top and sides of the cake. The whole Sachertorte Cake is then iced with a velvet-like chocolate and served with a side dish of whipped cream.

It was created in Vienna in 1832 by a 16 year old apprentice baker named Franz Sacher for Prince Metternich. Franz’s son Eduard Sacher founded the Hotel Sacher in Vienna in 1876, and the hotel still makes Sacher Torte using the original secret recipe of Franz Sacher.
