Flatbread is a highly versatile preparation, suitable for many occasions: from an aperitivo, to a buffet, or simply as a tasty and healthy family meal. There are countless variations, but the one we love most is undoubtedly the version made with stale bread and Mutti Polpa – Finely Chopped Tomatoes, rich in texture and perfect for oven baking. These two ingredients, simple yet full of flavour, combined with fragrant herbs and good extra virgin olive oil, create the perfect flatbread. The beauty of this recipe lies in its rustic character: a dish that transforms everyday ingredients into something inviting, golden and fragrant, capable of bringing people together around the table. Crunchy Tomato Flatbread is also delicious cut into small squares and enjoyed as finger food. Its crisp crust and soft interior make it appealing to both adults and children, while the tomato enriches it with colour and freshness. You can prepare it in advance and reheat it briefly before serving.
The recipe for Crunchy Tomato Flatbread is very straightforward, requiring just a few ingredients for maximum flavour. It’s an incredibly fast way to prepare a snack, an appetiser, or a light meal without complicated techniques. This base recipe, however, can easily be enriched with vegetables to make it even more tempting. Aubergines work beautifully, but peppers, courgettes and onions are also excellent. If you choose to add vegetables, we recommend cooking them separately in a pan before incorporating them into the mixture. For a more indulgent version, you could also add capers or olives. Each variation gives the flatbread a new personality, while preserving the irresistible crunch and the vibrant taste of tomato at its heart.
