What’s better to start your day, than an omelette with brie and marinated sliced peeled tomatoes? Maybe two!
This Brie omelette with marinated peeled tomatoes is an easy vegetarian recipe that works beautifully for breakfast, brunch or a light meal. Fluffy eggs are paired with creamy Brie cheese and juicy tomatoes marinated with garlic and aromatic herbs, creating a simple combination of rich, fresh and savoury flavours.
Mutti Peeled Tomatoes are particularly suited to this recipe thanks to their firm, fleshy texture. Sliced and seasoned with basil, thyme, oregano and marjoram, they bring a bright tomato flavour that balances the creaminess of the melted Brie.
1
In a bowl, beat eggs and milk. Add the parmesan cheese.
2
In a small bowl, add the sliced Mutti peeled tomatoes, all the herbs, the garlic and the salt. Mix and put aside.
3
In a second bowl, whip egg whites. Add them slowly to the first bowl.
4
In a skillet, add the extra virgin olive oil and once it is hot, pour in half the eggs. Cook them on a low heat with the lid on without stirring.
5
Once it's almost ready, add the slices of brie cheese at the centre of the omelette, and the marinated peeled tomatoes. Fold the omlette in half to cover the cheese and the tomatoes, and let it cook for another couple of minutes until the cheese melts.
6
Serve immediately.
For a lighter, fluffier texture, the egg whites are whipped separately before being gently folded into the egg mixture. The omelette is then cooked slowly over a low heat before adding the Brie and marinated tomatoes. Fold it in half and cook for a few more minutes, just until the cheese melts, then serve immediately.
Peeled tomatoes are a great choice for omelettes because they offer a soft yet fleshy texture and a full tomato flavour. Mutti Peeled Tomatoes are made from tomatoes grown in Italy and preserved whole in tomato juice, making them easy to slice, season and add to egg-based dishes.
For this recipe, marinating the tomatoes with garlic, olive oil and herbs before adding them to the omelette gives them extra flavour and helps create a more aromatic filling.
