This soup is true winter comfort food, bringing together all the finest flavours and aromas of Maghreb cuisine. Pulses, vegetables, spices and fresh herbs blend together to create a dish that warms the heart and nourishes the body. One of the main ingredients in this recipe is tomato: Mutti Polpa – Finely Chopped Tomatoes and Double Concentrated Tomato Paste enhance and bring together all the ingredients in a harmonious embrace, giving the soup depth of flavour and a pleasant, rich red colour.
In Moroccan tradition, harira soup is prepared especially during the period of Ramadan or at the end of it. This is because it is a very nourishing dish, rich in pulses, vegetables, spices and aromatic herbs and, in its original version, also lamb. We chose to reinterpret it without meat to suit all tastes, and the result is certainly not altered: a soup with a rich and genuine flavour, ideal for cold winter evenings.
