For this Chicken Parm, we used Mutti Pasta Sauce with Parmigiano Reggiano to add extra creaminess and a rich cheesy flavour that pairs beautifully with Mutti tomatoes.
1
First, beat the egg in a bowl. Coat the chicken slices in the flour, then dip them into the beaten egg and finally coat them in the breadcrumbs, pressing gently to make sure the coating sticks well.
2
Heat a drizzle of oil in a frying pan and cook the breaded chicken on both sides until golden brown. Season lightly with salt.
3
Transfer the chicken to a wire rack set over a baking tray. Spoon the Mutti Parmigiano Pasta Sauce over each piece, then top with the ham and mozzarella. Finish with a little freshly ground black pepper.
4
Bake in a fan oven at 180°C for around 10 minutes, or until the mozzarella has melted. Switch to the grill option of your oven for the final 2 minutes, until the top is golden and lightly browned.
Chicken Parmigiana is one of those simple dishes that wins you over from the very first bite. Crisp on the outside and tender on the inside, the chicken is topped with tomato sauce, cooked ham and melting mozzarella: an irresistible combination that is perfect for a family lunch or a dinner that feels a little different from the usual.
The secret lies in the contrast between the golden, crunchy coating and the soft, flavourful topping, made even more tempting by a final spell in the oven. The recipe starts with classic breaded chicken cutlets: the chicken is coated first in flour, then in egg and finally in breadcrumbs, creating an even, crisp crust as it cooks. Once golden in the pan, the cutlets are transferred to a baking tray and topped with Mutti Pasta Sauce with Parmigiano Reggiano, whose rich, rounded flavour pairs beautifully with the chicken without overpowering it. Cooked ham and mozzarella complete the dish, melting in the oven to create an irresistibly gooey topping.
In this recipe, the tomato sauce brings all the ingredients together and makes the chicken even more flavoursome. Mutti Pasta Sauce with Parmigiano Reggiano adds a rich, smooth note that works perfectly with both the crisp breadcrumb coating and the creaminess of the melted mozzarella.
The result is a generous yet easy-to-make dish, ideal whenever you are in the mood for something comforting and satisfying. The base stays deliciously crisp, while the topping becomes soft, gooey and lightly golden: a contrast of textures that makes every bite especially tempting.
Despite its name, Chicken Parmesan, also known as Chicken Parmigiana or, more commonly, Chicken Parm, is not a traditional Italian recipe. Instead, it is a much-loved Italian-American classic, inspired by Italian dishes such as aubergine parmigiana.
The dish combines breaded, golden chicken with tomato sauce and cheese, before being finished in the oven until the topping is soft, melted and bubbling. It is not traditionally found in Italian cuisine, but has become particularly popular in the United States and, in slightly different forms, in Australia as well.
