1
Peel and chop the carrots and onion. Use a vegetable peeler to remove some strips from the celery stalk to eliminate the fibrous parts, then chop it.
2
Place the chopped vegetables in a large pot, add 4 cups of water, and season with salt. Cover with a lid and cook for 20 minutes.
3
Rinse the red lentils thoroughly and drain them. Add the lentils and Mutti Polpa to the pot, then continue cooking for an additional 40 minutes.
4
Once cooked, grate the ginger and add it along with the turmeric. Blend the soup with an immersion blender until smooth.
5
Serve with your favorite fresh herbs for garnish. We’ve used chives and thyme for a fragrant touch.
After the warmth and indulgence of the holidays, nothing beats a comforting detox soup on cold days. This recipe combines red lentils, Mutti finely chopped tomatoes and spices to create a simple yet satisfying dish that brings a pleasant feeling of lightness.
Flavor and lightness come together in this vibrant soup that helps detoxify your body. Red lentils are nutrient-dense, low in fat, and among the quickest legumes to cook and digest.
The spices we’ve chosen—fresh ginger and turmeric—not only enhance the soup’s flavor but also provide detoxifying and cleansing benefits that promote overall well-being.
For intense flavor and vibrant color, we’ve selected Mutti Polpa, which adds sweetness and its distinctive rich taste. You can enjoy this dish as a hearty soup or blend it into a velvety purée.
With simple ingredients that you likely already have at home, this recipe comes together quickly. Light the stove and prepare this winter comfort food to help refresh your body.
