Lettuce wrap, a great and easy option for a low carb snack
1
Using a potato peeler, peel the cucumber, then slice it into round circles.
2
Wash and dry the salad and gently remove the leaves. Make a vertical cut about 7 or 8 cm long at the center of the base.
3
Divide the leaf into four quarters and place a square of feta cheese seasoned with oregano on the first quarter. Put a peeled tomato cut into strips and sprinkled with salt in the second quarter, a few slices of cucumber in the third, and a small tablespoon of olives in the fourth quarter.
4
Starting from the first quarter with the feta, close the leaf upwards, then close it to the right, then finally close everything over the last quarter.
5
Serve the lettuce wrap on a bed of rocket and sliced carrots and season with oil, salt, and pepper.
Wraps are often associated with soft flatbreads rolled around savory fillings, quick, satisfying, and endlessly versatile. But what if we told you that you could enjoy all that flavor and texture without the bread? That’s right, this wrap is all salad… but it doesn’t think so! Our fresh twist on the classic wrap skips the carbs and replaces traditional flatbread with crisp, refreshing lettuce leaves. It’s a playful, guilt-free alternative that’s just as tasty—and even more refreshing. All you need is a variety of wide-leaf lettuce like iceberg, romaine, or little gem. Their sturdy yet tender texture makes them perfect for wrapping. This recipe is ideal for a light lunch, a healthy appetizer, or a colorful addition to a brunch buffet. It’s naturally gluten-free, easy to personalize, and quick to prepare—no cooking required! We kept things Mediterranean and fresh: our wrap is filled with Mutti Peeled Tomatoes, prized for their rich, fleshy texture and naturally sweet flavor. We paired them with crumbled feta for a creamy, tangy contrast, thinly sliced cucumber for crunch, and a few black olives for a bold savory note. A drizzle of olive oil and a pinch of oregano elevate the whole bite.
One of the best things about lettuce wraps is how adaptable they are. Want to add protein? Toss in grilled chicken, tuna, or chickpeas. Craving something spicy? Add a few chili flakes or a dollop of harissa. Prefer a creamy texture? Hummus or Greek yogurt make excellent additions. Let your creativity guide you and build your perfect wrap. Whether you’re preparing a quick weekday snack or hosting friends for dinner, these lettuce wraps are a fresh, fun, and flavorful way to enjoy vegetables at their best.
