Soak the cod for a few hours, changing the water often. Even if you’ve bought pre-desalted cod, it is always better to do this step.

With tweezers remove any bones and cut it into pieces of about 5/7 cm.

Crush the garlic and chop the Mutti Peeled Tomatoes.

Put the oil in a pan, add the garlic and parsley and seal the pieces of cod on both sides.

Remove the garlic and parsley, blend with the white wine, and add the red chili.

Add the black olives and chopped Mutti peeled tomatoes, close with a lid and cook over low heat for 25 minutes, shaking the pan from time to time. Avoid turning the cod from this point on to prevent it from breaking.

Sprinkle oregano before plating the cod covering it with a couple of spoonfuls of the delicious tomato staight from the pan.
Livornese-Style Salt Cod is a traditional recipe originally from the city of Livorno, in Tuscany. Due to its goodness, its genuine taste and the availability of its simple ingredients, it is prepared throughout Italy at any time of the year. This recipe is made with cod preserved thanks to a salting process, unlike stockfish which is dried cod (therefore without salt). In many fishmongers it is possible to buy already desalted and soaked cod. If, on the other hand, you buy salted cod, before being consumed, it must be rinsed thoroughly from the salt and soaked for at least three days, changing the water several times a day. If this procedure is not done correctly the result will be quite salty.
For this reason it is advisable never to add salt in recipes in which cod is present, in order to check the flavor of the dish during cooking and if anything, add some. If it is necessary to reduce the salt, a very simple method is to add a peeled and chopped potato that will absorb the excess salt. This Mediterranean and tasty dish can be enjoyed with toasted bread!
