The history of pancakesSavoury pancakes with a rich tomato twist

These savoury tomato pancakes offer a creative alternative to classic sweet pancakes. Mutti Double Concentrated Tomato Paste is mixed directly into the batter, giving each pancake a rich tomato flavor and distinctive character. Paired with smoked salmon and a smooth goat’s cheese fondue, the pancakes combine savory, creamy and smoky notes, while fresh dill adds a fragrant finish.

Tips for light and fluffy savoury pancakes

For perfectly soft tomato pancakes, sift the flour and baking powder before mixing and gently fold the whipped egg whites into the batter to keep it light and airy. Cook the pancakes over moderate heat without browning them too much, so they remain tender. For the goat’s cheese fondue, stir the cheese, milk and cream continuously as they heat until the mixture becomes smooth and creamy. Serve with smoked salmon, soft goat’s cheese and fresh dill for an elegant finishing touch.
